Trader Joe's Frozen Cauliflower Gnocchi
1 Tbsp Trader Joe's Vegan Pesto
8 Frozen Raw Shrimp
Olive Oil (I use spray)
Seasonings: pink salt, garlic salt, garlic powder, onion powder, paprika
Optional: marinara (for dipping), sliced ham, steamed broccoli, and cottage cheese
1. Thaw the Shrimp. Place shrimp in a bowl of warm water for 20–30 minutes until fully thawed. Drain and pat dry.
2. Cook the Cauliflower Gnocchi. Cook according to package instructions using the pan method for best texture.
3. Once cooked, plate half of the gnocchi and mix with vegan pesto until evenly coated.
Cook the Shrimp
Heat a pan over medium-high heat for about 30 seconds. (Optional: add ~½ tsp butter or olive oil.)
Season one side of the shrimp with: Salt, Garlic powder, and Onion powder
Place shrimp in the pan seasoned side down and cook for 2–3 minutes.
Season the other side with: Garlic salt and Paprika
Flip and cook for another 1–2 minutes, until fully cooked.
Add Sides (Optional)
Add steamed broccoli and cottage cheese to your plate if desired.
Serve
Plate shrimp over or alongside the gnocchi and enjoy 🤍
Notes
Shrimp cooks quickly, avoid overcooking to keep it tender.
Pan-frying gnocchi gives the best texture (crispy outside, soft inside).
Adjust portions based on your needs and hunger.
