3 medium sweet potatos
3 small japanese sweet potatos
1 lb ground beef (I use 93/7 organic grass-fed)
4 cups broccoli
1 tbsp olive oil (I use spray)
Seasonings: salt, pink himalayan salt, garlic salt, onion salt, garlic powder
Optional: avocado and cottage cheese for plating
Sweet Potatoes
Preheat oven to 400°F. Line a baking sheet with parchment paper or aluminum foil.
Wash potatoes and poke holes all the way around using a fork or knife.
Place on baking sheet and bake for 40–75 minutes (depending on size), until soft and squishy.
Broccoli
Line air fryer with aluminum foil.
Add broccoli, drizzle with oil, and season. Mix to coat evenly.
Air fry at 400°F for 8–12 minutes, depending on your preference.
Ground Beef
Heat a pan over medium-high heat.
Add ground beef and break it up with a spatula. Add seasonings.
Cook for 6–8 minutes, stirring occasionally, until fully cooked (no pink or just a slight hint remaining).
Remove from heat and set aside.
Plating (what I do)
1 medium baked sweet potato (cut open + seasoned with pink salt & garlic salt)
1 small Japanese sweet potato (cold)
1 cup air-fried broccoli
5 oz cooked ground beef (1/3 of the ground beef cooked)
½ avocado, cubed
¾ cup Good Culture 2% cottage cheese
